A hint of Winter November Osusume

SHOUT & WHISPER

Meet JUNKI, a.k.a. EIWA.NO5. He is the flow.

In the push of summer, leadership doesn’t come from volume. It comes from rhythm. From trust. From being there—first, last, and steady. JUNKI a.k.a. EIWA.NO5 doesn’t shout much. His strength is quiet. His timing, precise. He doesn’t just see fish. He reads them.

Nothing breaks his rhythm. Even the heaviest boxes move lightly in his hands. Junki is @eiwa.no5

“….And You can’t just look. You have to listen,” Junki says. “Some fish shout. Some whisper. I ship only the ones that speak truth.”

Scales shimmer. Flesh tightens, their freshness undeniable — color, scent, tension — subtle signs only trained hands can catch.

The power of U

Foods that begin with “U” have long been believed to fight off summer fatigue in Japan. Unagi (eel). Umeboshi (pickled plum). Uri (gourd). Udon. You don't fight the heat. Each one offers a different kind of defense against heat, against exhaustion, against the weight of humidity. Junki takes them seriously. Not just for tradition, but because they work.

Not just any umeboshi. The kind that snaps you awake. Like a jolt of clarity wrapped in rice.

“You don’t fight the heat,” he says. “You let the right foods carry you through it.”

Junki’s August picks

Next week, follow Junki into the cold room — where breath fogs, and precision deepens.
